Orange plinapple,peach and mango smoothie




This simple and yummy smoothies are just wonderful  packed with good for you antioxidants, this strawberry smoothie and the pineapple smoothies are my family new favorites.
 
Strawberry  smoothie like a ice cream
ingredients
•1 cup whole milk
•½ cup frozen or fresh strawberries
•1/4 cup strawberry flavor fat free yogurt or strawberry ice cream
•1 banana, broken into chunks
•4 ice cubes
•1tsp honey

Directions
In a blender, combine  milk,strawberries,banana,honey,ice cubes, and yogurt  Blend until smooth. Pour into glasses and serve

1/2cup sliced fresh pineapple
1cup freshly squeezed orange juice
1  frozen or fresh  peach sliced
¼ cup sliced frozen  mango
4 cubes of ice
put everything together in blender and blend until smooth about 1 minute .add to glass and serve.

basbousa




who doesn’t like coconut and in my family we love coconut and that’s why  after coconut ice cream and coconut cookies I am  making this sweets .if I look back about 12 years back I got this cake recipe from my sister who was student at medical college and her friend  always got this cake from her aunty and she share this cake with all her friends and my sister got the recipe for me because she know that I will love to make it and ever since I make this on and off .I did make few changes like usually it have 1 cup butter and 1 cup sugar and then again 1/2cup sugar in the syrup .
So here you go classic basbousa with a twist hope you will like it.

Ingredients

1 cup all purpose flour
1 cup semolina soji
2 cup descanted coconut
2tsp baking powder
1tsp vanilla sugar
1/4cup sugar
2 eggs
1/2cup canola oil or butter
1/4cup milk
for syrup
1/2cup sugar
1/4cup water
drop of rose water optional
method:


in large mixing bowl mix oil, sugar and eggs for 1 minute.
Add all the dry ingredients flour,soji,and coconut baking powder and vanilla sugar and beat for 1 more minute . Grease the square baking dish  and pour the batter .now bake this in preheated oven for 2 to 30 minutes or until the tooth pick insert come out clean.  Then cut  cake in desire shape  while still in baking dish
cook together the sugar and water until the sugar all dissolved pour over the cake and let it cool completely then serve with extra coconut.

Vegetable and meat omelet

There are some time that you want hardy and filling breakfast and today is that day want to do all those left un complete project including cleaning those wall at the play area were my daughters write abc and change the setting of my room .so I make  this omelet  which was base on the things I have on hand left over minced chicken some vegetables and it was very yummy .
Ingredients:
1/4cup chicken minced
6 asparagus sliced
2 green scallions sliced
salt and pepper according to taste
1 slice of tomato from my left over salad bowl
1tbsp oil
2 eggs beaten
method:

add oil and minced meat to frying pan and stir fry for 1 minute.
Add all the sliced vegetables.
I usually add baby spinach too.
Stir fry for 1 more minute .

Now beat the eggs add salt and pepper and pour stir on low flame just to mix now let it set then fold and serve with salad and slice of bread  and don’t forget the coffee.

High five Biscuits and raspberries spread  

This classic southern breakfast always been favorite at my household .
Biscuits need much care while making them the amount of good baking powder also play a key role in making them rise .and always remember to used fresh baking powder and soda for the experiment I try I tsp baking powder in 1 tbsp vinegar  if its bubbly then its mean the baking soda will work.
The other most important ingredient is butter oh yes butter .I by my self  try to keep away from saturated fats such as butter, ghee etc. but in this recipe I have to use it but in moderation. and I don’t eat often so I can eat them once in very while right….

Also remember the store brought jam will not work in this recipe its something about that homemade jam and for this you have to try my raspberries  spread  too

Ingredients

1-1/4cup all-purpose flour
3tbsp butter
2 tsp baking powder[ aluminum free]
 1/4tsp baking soda[ aluminum free]
pinch of salt
1/4tsp sugar
1/4cup cold buttermilk
 milk or cream for brushing
method:
preheat the oven at 375.f and spray a baking sheet with non stick spray.
In large mixing bowl combine flour ,baking soda ,baking powder, sugar salt and butter then cut the butter in small cubes by the help pastry cutter or you hand until it resembles to bread crumbs.
 Now add butter milk to the flour mixture and mix it with your hands until just combine[do not over mix]
Lightly sprinkle flour on your working surface and turn the dough and roll it in to 7 inches round circle and cut biscuits with the help of cooking round  cutter and arrange them in the prepared baking tray brush them with cream or milk and bake them for 20 minutes or until lightly golden and puff up.

Raspberries jam

Ingredients.
1 cup fresh or frozen organic raspberries
1 cup fresh or frozen organic strawberries
½ cup sugar
1tsp lemon juice
method:

clean the fruits slice the strawberries add to non metallic sauce pan add raspberries too and cook it on low heat stir frequently until fully cooked add lemon juice and sugar mash the with potato masher .now high the heat and sit constantly until the fruit spread get thick let cool and serve
.

Fruit bake/apple crisp



Some time we want to enjoy the sweet pies but  due to the fat content  we think again and again .and this happen to me too .I love apple pie and I love this apple bake too because it just taste like apple pie but half of the fat make me happy to enjoy it.
The apple cooked perfectly and the crunchy topping make it so yummy I am hundred percent sure if you make it there will be no left over.  


Fruit bake/apple crisp

Ingredients:
1tbsp sugar
3tbsp orange juice[freshly squeezed]
6 apples cored and peeled and sliced
3 pears,cored,peeled and sliced
 2tbsp apricot jam
topping
½ cup all purpose flour
6tbsp butter
2tbsp oil
1/4cup oats
1/4cup chopped almonds
¼ cup pecans 1tbsp milk
3tbsp brown sugar
for extra crunch ¼ cup garnish with honey bunch of oat cereal.
Method:

Lightly grease oven proof baking dish or pie dish with little oil or butter.
Prepare fruit ,by peeling and cutting then add to large mixing bowl and combine it with 1tbsp sugar, orange juice and apricot jam.
Mix until well combine then pour it in prepared baking dish and spread evenly.
Now make the topping, strain the flour in to separate bowl ,add butter ,oil and brown sugar and rub it with your finger ,until the mixture resembles to bread crumbs.
Add nuts and mix it with spoon sprinkle it with spoon on the to of prepared fruit dish spread evenly and bake it in the preheated oven at 375.f for 25 to 30 minutes or until golden brown on the top . serve this with yogurt or just by its own.
Variation: I some time add blue berries or any other fruits like strawberries to 
the apple too.

braided raisins and Almond  bread
bread  make is my all time favorite hobby I love making bread and usually I dont follow recipe its all depend on what ingredients I have on hand and what I want. in my home I make bread every other day .I always love breads and making them by your own is hand is a simple pleasure .the aroma and flavor is out of the world. This bread not only look great but also taste wonderful. and if you serve it  for you breakfast or brunch I am sure people will ask for recipe its that good.

Ingredients:

2 cups bread flour
1-cup whole wheat flour
1 tbsp active dry yeast
2 tbsp oil
1 tbsp butter
4 tbsp sugar
4 tbsp honey
3/4 cup milk
1 egg
1/4 cup golden raisins
1/4 cup chopped almonds 
1 tbsp yogurt
sesame seeds  for sprinkling on the top
make 2 medium size breads

Directions:
Method:


In warm milk mix yeast, sugar and honey and keep aside for 15 minutes.
Strain the flour into large bowl then add butter and oil, rub it with your fingers and then add milk mixture, mix it to form a dough. Knead the dough for 5 minutes or until becomes smooth.
Cover the dough for 3 hours or until it doubles in size. 

Add raisins, nuts and knead the dough for 2 minutes. Now divide the dough in to 3 equal pieces. Roll each piece between your palms into a 15 inch rope. Pinch the ropes together at the end and braid loosely.  Brush the loaf pan with little oil and place the dough in loaf pan and cover with wet towel for 45 minutes then  brush with egg white and sprinkle almonds or sesame seeds  and  bake it in preheated oven at 425°F for 30 minutes or until the bottom of bread sounds hollow when taped. Remove it from pan and let it cool off on wire rack.

Note .you can made small bread rolls if you like.
